Raw material: 100% Moscatel grapes from Malaga.
Elaboration: For the elaboration of this wine a late harvest is made, when the grapes are quite ripe.
Once the harvest is done, the grapes are introduced in cold stores for 24 hours to carry out cold processing.
First, we destemmed the grapes and macerated them for 12 hours, we introduced it in the pneumatic press, where we extracted the yolk must, rotating the press without exerting pressure, in order to obtain a very high quality must.
Alcoholic fermentation takes place in centuries-old boots of Jerez wine, the temperature in the fermentation is not controlled.
Aging: The aging of this wine is done in Bordeaux barrels (225 L) of fine-grained French oak, from the Allier forests. The toasting of the barrel is medium.
