Elaboration: The strawberries are harvested at their peak of ripeness on the plant and are transported by refrigerated trucks to the wine cellar. By hand, the stalks and green leaves are removed from them one by one.
Next, they are introduced into stainless steel vats with a stirring pump, in this process the breakage of the strawberries is done and extraction of the liquid; this mass is kept macerating for 5 to 6 days at a very low temperature of around 3º C.
For fermentation we use selected yeasts, suitable for this fruit. The fermentation process is done with an exhaustive temperature control (between 10 and 16 degrees Centigrade).
