Elaboration: Once the grapes are harvested, they are transferred to the airing installations, here is where the aeration process is started on reed platforms, raised above the ground at 50 cms, in this way we achieve perfect aeration of the grapes, avoiding fungus and rot.
We also place a plastic pyramid shaped structure above them which slides on rails which we deploy at night and remove during the day, this way we avoid the drops of dew from falling onto the grapes or occasional rainfall.
Once the aeration process is finished, the grapes are moved to the wine cellar, keeping them in refrigerated chambers during 24 hours, in order to carry out the cold elaboration.
First the grape stems are removed and the grapes are directly deposited in the vats where they are macerated at a very low temperature (around 3º C), for the necessary time in order to extract color, tannins, aromas, etc. (around 5 days).
For fermentation we use selected yeasts (Saccaromyces cerevasiae), with a constant temperature control between 12 and 18 degrees centigrade, in this way we achieve super aromatic wines that are also super fruity.
Characteristics that define it: A semi-sweet wine that is genuine and original in flavors and taste.
